Weekend Chai


Do you like spiced sweetened tea? I do, but I wanted a simple recipe that I could make on the weekends. This one is easy enough that you could make it more often (but let's not get carried away). I use decaffeinated black tea bags, but if that is too much caffeine for you, use rooibos tea. Feel free to sub out the spices or to use sweetened condensed milk in place of the half and half and sugar. 


Weekend Chai
Serves 4
Adapted from NYT Cooking

6 cups water
2 cardamom pods, cracked
6 slices of fresh ginger root
6 whole cloves
1/2 cinnamon stick
few peppercorns
3 tea bags
1/4 cup half and half
3 Tblsp sugar, or to taste

Heat the water in a large saucepan and add the spices. Once it reaches a rolling boil, add the tea bags, cover the pot and turn off the heat. Wait 3 minutes for the tea to steep, then add half and half and sugar.
Serve hot.
