Chewy Cocoa Brownies

 


So, you have a brownie craving and you want to be able to make a batch with pantry staples and a bowl and whisk? I have a sure-fire recipe for you. These are easy to make, and you don't even have to pull out a mixer. If you have these basic ingredients, you can be eating brownies in an hour. Now, I believe the secret to success is in the baking. Bake too long and they will be cakey. For a perfect bake use a probe thermometer and bake until the internal temperature is 180 degrees for perfectly chewy brownies.

Chewy Cocoa Brownies
Makes 16
Adapted from Nestlé Toll House

1 1/3 cups flour
3/4 cup baking cocoa (not Dutch process)
1/2 tsp baking powder
1/4 tsp salt
1 1/4 cup sugar
1 1/2 sticks butter, melted
2 Tblsp water
2 large eggs
2 tsp vanilla extract
2/3 cup chocolate chips

Preheat oven to 350 degrees, rack in center position. Grease a 8x8" baking pan.

Combine flour, cocoa, baking powder, and salt in a medium bowl. (If there are lumps, put it through a sieve or a sifter.)

In a large mixing bowl combine sugar, melted butter, and water. Stir in eggs and vanilla extract. Whisk well, until thick and glossy.

Gradually stir the flour mixture into the butter mixture. When a smooth batter is achieved, add the chocolate chips and incorporate them into the batter. Spread into prepared pan.

Bake for 22 minutes or until a wooden toothpick inserted into the center comes up slightly sticky. Cool completely before cutting into 16 squares.
