Chinese Greens with Oyster Sauce

 


Bright green and crisp, this quick cooking recipe adds a lot of pizzazz to a meal of frozen dumplings from Trader Joes! You can make this with Chinese broccoli, as we did here, or with bok choy. Make sure you're using good-tasting oyster sauce as this is the main flavor in this dish. I recommend the original brand: Lee Kum Lee. It's the skinny red bottle with a panda on it.

Chinese Greens with Oyster Sauce
Serves 4-5

2 lbs leafy greens, such as gai lan or bok choy
2 Tblsp toasted sesame oil
1/2 cup oyster sauce
Toasted sesame seeds (optional)
Fried shallots or crispy onions (optional)

Bring a large pot of water to boil. Set up an ice bath in the sink by filling a large bowl with ice water. 

Slice any thick stalks lengthwise so that all the greens cook at the same time. 

Once the water boils, add the greens and cook for 1 minute. Use tongs to transfer the greens to the ice bath to stop the cooking. After 30 seconds remove and drain the greens and arrange in a platter. 

Drizzle the greens with sesame oil, oyster sauce and garnish with sesame seeds and crispy onions. Serve immediately.
