Sugared Cranberries
From VanillaandBean.com
Makes 1 cup

1/2 cup water
3/4 cup sugar, divided
1 cup fresh cranberries, rinsed and drained

Heat the water and a half cup of sugar in a small saucepan and simmer until the sugar dissolves. Remove from heat and add the cranberries. Cover and let sit for 10 minutes.

Meanwhile, spread a layer of parchment paper on a wire rack.

Use a slotted spoon to remove the cranberries to the parchment paper and allow to dry for at least one hour. Put the remaining quarter cup of sugar in a shallow bowl and spoon in the cranberries in small batches. Roll the cranberries around in the sugar to coat.

Store the cranberries in a sealed container in the refrigerator. Keep cool until served. If the cranberries lose their coating, toss the cranberries in sugar again before serving. This recipe doubles nicely.
