Brownie Cookies


Hankering for a brownie, but in a smaller portion? Try a brownie cookie. Surprisingly satisfying, chocolatey, dense and chewy these cookies are easy to prepare and enjoy. I like that they rely on cocoa powder and a few staple ingredients and mix easily in one bowl. A nice lunchbox treat or late afternoon indulgence. 


Brownie Cookies

Makes 24

2/3 cup flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup butter
1/2 cup cocoa powder
1 Tblsp hot coffee (a bit of decaf instant coffee powder in hot water works well)
1/3 cup sugar
1/3 cup brown sugar
1 egg
1/2 cup semisweet chocolate chips

Preheat oven to 350 degrees. 

Whisk together the flour, salt, and baking powder in a large measuring cup. Set aside.

Melt the butter in a medium-sized glass bowl by microwaving for 30 seconds, stirring and microwaving again if needed. Stir the cocoa powder into the melted butter, add coffee, both sugars, and egg. Beat well with a hand mixer, about 2 minutes.

Add the flour mixture gradually. Mix with a rubber spatula until well combined. Fold in the chocolate chips. Chill the dough for 30 minutes.

Line 2 cookie sheets with parchment paper and form rounded cookies using 1 tablespoon of dough or a small portion scoop for each. Set them 2 inches apart on the cookie sheets. 

Bake for 8 minutes or until the edges are set and the tops are slightly crackled. Take care not to over-bake. Any portions that aren't eaten in a day or two can be frozen.
