Baked Feta Pasta


This TikTok recipe took the internet by a storm to the point where blocks of feta have become difficult to source in some places. I heard about this on a Food52 podcast and wanted to try it. Fortunately, you can still get feta at grocery stores around here, though cherry tomatoes were rather scarce. Try this with pasta shapes that will hold the sauce. I consider this an easy, extra-savory adult version of mac and cheese. It's an elevated comfort food!


Baked Feta Pasta
Serves 6

10 oz dried pasta 
2 pints cherry tomatoes
8 oz block of feta
1/3 cup olive oil
1/4 tsp salt
1/4 tsp pepper
2 garlic cloves, minced
1/4 cup fresh basil, chopped

Preheat oven to 400 degrees. Rinse the cherry tomatoes and arrange in a single layer in a 9x9 baking pan. Place the feta block in the center, drizzle the olive oil over the tomatoes and season with salt, pepper and garlic.



Bake 35 minutes until the tomatoes burst and the cheese melts. 

In the meantime, boil the pasta according to package directions. Drain and set aside.

When the tomatoes and cheese are ready, stir into a sauce, add pasta and stir again. Garnish with basil and serve warm.
