Tiramisu Mousse

 


Everyone loves tiramisu, right? But what is the best part? I think you'd agree with me that it's the mousse. Ladyfingers dipped in coffee are just carriers of the coffee flavor, but eventually the cake gets soggy. We have the coffee covered in this pure mousse version. Layered with cocoa powder for a touch of bitterness and garnished with chocolate shavings, or mini-chocolate chips, this is an easy peasy dessert to make. And it goes down even easier. If you enjoy maple, try subbing out half the powdered sugar for maple syrup.

Tiramisu Mousse
Serves 6

1 1/2 tsp instant decaf coffee or espresso
1/4 cup hot water
1 cup heavy whipping cream
1 Tblsp Kahlua
1/2 cup powdered sugar
8 oz marscarpone cheese
1 Tblsp cocoa powder
mini semi-sweet chocolate chips for garnish

Dissolve the instant coffee in the hot water and set aside.

Beat the heavy cream until stiff peaks form.

In a medium bowl mix sugar and marscarpone with a hand mixer until smooth. Add the Kahlua and 2 tablespoons of the coffee. Add more coffee to taste. (I used all of it.)

Fold the whipped cream into the coffee mixture gently. Spoon into small serving glasses (4 oz size) to cover the bottom, dust with cocoa powder (I used a sieve for this) and then add another layer of mousse. Garnish the top with mini chocolate chips. Cover each glass with plastic wrap and chill until served.

Alternatively, you could serve this mousse over cut strawberries, parfait-style. Or you could layer slices of sponge cake or pound cake in a square baking pan with mousse in between. Dark chocolate crumbs could be a good layering element instead of cocoa.
