Sweet Black Sesame Soup


Black sesame soup is a classic Chinese dessert. Try this quick and easy version for a thick creamy slightly sweet soup that is warm and comforting. Made with whole black sesame seeds (available at Asian markets) that are a good source of many vitamins and minerals including iron, magnesium, manganese, copper, calcium, vitamin E and vitamin B1. If you lack coconut milk, you can substitute almond milk or another nut milk.



Sweet Black Sesame Soup

1 cup black sesame seeds
1/2 cup glutinous rice flour
2/3 cup sugar
1 can (14 oz) coconut milk

Rinse the sesame seeds in a fine mesh sieve under running water. Transfer to a powerful blender (I use a Ninja) or a food processor. Add one cup water and blend for one minute. Add a second cup of water and blend for 2-3 minutes more.

Whisk the rice flour with a cup of water and add to the blender. Blend for another minute. The mixture should look gray and grainy. Transfer the mixture to a large heavy pot over medium low heat. Whisk steadily until it simmers. Add 2 cups of water and continue to whisk occasionally to prevent lumps.

Add the sugar and the coconut milk. Continue to whisk until the sugar is incorporated and the mixture starts to bubble. Turn off the heat and taste. Add more sugar if desired. Serve warm or store in the refrigerator.
