Deviled Eggs
Happiness is a platter of deviled eggs, is it not? Every year at our holiday party these are a favorite. We used to order them from Byerly's catering but the last two years my kids decided to make them. To make the process simpler, we purchase peeled hardboiled eggs from Trader Joes. If you want to get fancy, you could garnish them with parsley, paprika, smoked salmon or caviar.
Deviled Eggs

18 hard boiled eggs, peeled
1/2 cup mayonnaise
1 Tblsp mustard
1 Tblsp cider vinegar
1/2 tsp salt
1/4 tsp pepper
paprika
garnishes (optional)
Slice each egg in half lengthwise. Use a small spoon to scoop out all the yolks being careful not to break the egg whites. Put the yolks in a small bowl and set the empty egg whites on a platter. Mash the yolks with a fork and add mayonnaise, mustard, vinegar, salt and pepper. Taste and adjust seasonings.
When the filling is well-combined and smooth, spoon the filling back into the egg whites. For a more festive presentation, use a piping bag with a star tip to distribute the filling back into the egg whites. Sprinkle with paprika. Serve chilled.
