Marcela Hazen's Super Simple Tomato Sauce
When I ran out of jarred tomato sauce I tried this intriguing recipe. Could tomato sauce be so simple? Yes, it can. And tasty too! Now I just keep a 28 oz can of crushed tomatoes in my pantry and tomato sauce is never far away. Serve with Parmesan cheese or a scoop of fresh ricotta over hot pasta.
Marcela Hazen's Super Simple Tomato Sauce

28 oz can Italian tomatoes, crushed
5 Tblsp butter
1 onion, peeled and cut in half
Salt
Parmesan cheese (optional)
In a large saucepan combine the tomatoes and their juice, butter, onion and a pinch of salt. Simmer over low heat for 35-40 minutes or until thickened, stirring occasionally. Remove the onion, chop it and return it to the sauce. Taste and season with salt and pepper as needed. Serve over hot pasta topped with shaved Parmesan cheese.
