Honey Mustard Pork


We had dinner at our friends' house last weekend and discovered their treasure trove of recipes in the form of a family cookbook. How delightful! I flipped through and took photos of several recipes to try at home. The next morning I tried Oatmeal Muffins. And a few days later, this delicious and quick pork recipe which I served over hash browns with a side of steamed broccoli. It's tasty and quick!

Honey Mustard Pork

Serves 4-5

1 lb pork tenderloin, trimmed
1/2 tsp chili powder
1/2 tsp ground ginger
1/2 tsp ground cumin
1/2 tsp curry powder
1/2 tsp salt
2 Tblsp olive oil
1/4 cup honey
1/4 cup apple cider vinegar
2 Tblsp water
2 Tblsp Dijon mustard
ground black pepper
parsley or cilantro, chopped

Cut pork into half lengthwise, then into 1/2" slices and transfer to a bowl. Add the spices (chili through salt) to the meat, mix well and marinate for a few minutes while you prep the rest of your dinner.

In a large non-stick skillet, heat olive oil and brown the pork on all sides for a few minutes. Add the honey, vinegar and water and stir to coat all the pieces. Reduce the heat to low and whisk in the mustard to make a smooth sauce. Cook for a few minutes until the sauce is slightly thickened.

Taste and season with salt and pepper. Garnish with parsley or cilantro. Serve hot over rice or potatoes.
