Millet Flatbreads (Rotlo)


A simple recipe for a quick flatbread made from millet which is a grass seed. This is good substitute for a corn or flour tortilla if you are avoiding GMO grains. Butter or coconut oil can be used in place of ghee. Any number of spices could be added to the batter for more flavor.

Makes 8

2 cups millet flour (also called bajri flour)
1/2 tsp salt
2/3 cup water
1 tsp ghee (or coconut oil)

Mix the flour, salt and water in a bowl. The dough will look a little like clay.

Heat a cast iron pan over medium-high heat. When hot, add a bit of ghee and wipe the pan out quickly with a paper towel. Drop 1/4 cup batter into the hot pan and spread it around with a metal spatula. It should look like a thin crepe. Cook briefly and flip when the edges are dry. Serve warm.
