Sugar-free Lemon Jello


For a cooling simple small dessert, it's hard to beat lemon jello. In the winter I like bone broth as a way to increase collagen in the diet, but in the summer I add some jello. Collagen is the most abundant protein in the body and is composed of essential and nonessential amino acids. Supplemental collagen promotes healthy skin, hair, teeth, and nails. It repairs joints, boosts metabolism, aids in detoxification and reinforces the mucosal gut lining.


Sugar-free Lemon Jello
Makes 6 servings

1 cup cold water
1/2 cup lemon juice (fresh squeezed organic is best)
1 1/2 cups boiling water
2 Tbsp unflavored gelatin powder (I like Great Lakes brand)
4 squirts liquid stevia, to taste

Combine the lemon juice and water in a mixing bowl. Sprinkle the gelatin on top and let soften while the water boils. Add the boiling water to the bowl and stir until the granules are fully dissolved. Add the liquid stevia and taste for sweetness. Transfer to individual serving cups, or one large Tupperware. Allow to chill for 6 hours or overnight. Serve chilled or at room temperature.
