Sugar-Free Coconut Flour Chocolate Chip Cookies


Well, it's not much of a treat, but when you're avoiding sugar and grains, even this will do! Feel free to substitute stevia sweetened chocolate chips for the chopped chocolate bar, or try it with 2 tablespoons of cocoa in place of the chocolate. These could also be made as bars in an 8x8" pan, just bake a little longer. These tend to crumble, so store carefully.


Sugar-Free Coconut Flour Chocolate Chip Cookies

1/3 cup coconut oil or melted butter
1/2 cup coconut flour
6 packets monkfruit sweetener
2 eggs
1/2 tsp baking powder
2 tsp vanilla
2 oz dark chocolate (70% or higher), chopped


Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

In a medium mixing bowl combine coconut oil, coconut flour, sweetener, eggs, baking powder and vanilla until it forms a smooth batter. Add chocolate pieces and mix again.

Drop by rounded teaspoon onto the cookie sheet. Flatten each mound into a little disk (the cookies do not spread). Bake for 12-14 minutes until edges are golden. Remove from oven and let cool on rack for 3 minutes, then remove to rack. Store in the freezer or an airtight jar.
