SCD Carrot Muffins
The Specific Carbohydrate Diet (SCD) eliminates all starches, except banana, and all sugars except pure honey, to allow the gut to heal. This protocol is recommended for people with carbohydrate malabsorption disorders such as Crohn's, ulcerative colitis, diverticulitis, celiac disease and chronic diarrhea. If you are fortunate enough to be able to eat nuts, you can still have a selection of baked goods like these moist and hearty muffins.
SCD Carrot Muffins
Adapted from Breaking the Vicious Cycle by Elaine Gottschall
1/2 cup butter (1 stick), at room temperature
2 eggs
1/2 cup honey
1 1/2 cups almond flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
1 1/2 cups finely shredded carrot
1/2 cup raisins
Preheat oven to 350 degrees. Line muffin tins with parchment liners.
Beat butter and eggs together in a medium bowl. Add honey and beat again.
Add dry ingredients (almond flour, baking soda, salt, cinnamon) and blend well. Add the vanilla and mix again. Stir in the carrots and raisins.
Fill muffin liners halfway full. Bake for 35 minutes.
