Paleo Cinnamon Raisin Bread


You are not going to believe how good this simple bread is -- for an uncomplicated recipe, the results are very good! Though the loaf may seem small, one slice makes a hearty snack. Feel free to substitute dried cranberries, chopped dates or currants for the raisins. Enjoy with butter or ghee.


Paleo Cinnamon Raisin Bread

Make 1 loaf

2 cups almond flour
2 tbsp ground cinnamon
1 tsp baking soda
1/4 tsp sea salt
5 eggs
1/4 cup honey
1/4 cup coconut oil, melted
2 tsp vanilla
1/2 cup raisins or currants

Preheat oven to 350.

Line a loaf pan with parchment paper allowing the ends to overhang the pan to make a "sling".

Combine almond flour, cinnamon, baking soda, and salt in a medium sized bowl.

Combine eggs, honey, coconut oil, and vanilla in a stand mixer until all ingredients are well incorporated.

Slowly add dry ingredients to the wet, and continue mixing. Once everything is well mixed, add raisins.

Transfer dough into the prepared loaf pan.

Bake for about 30 minutes, or until a toothpick comes out clean in the center.

Serve warm or let cool completely before storing. This bread keeps best in the refrigerator, or can be sliced and frozen.
