Slow Cooker Pulled Pork



Make tacos or burrito bowls with this tasty and easy weeknight staple. For this preparation, look for pork that is a little fatty for more flavor. Leftovers make great breakfasts reheated with eggs, or use pulled pork for another dinner, maybe in a stuffed pepper?


Slow Cooker Pulled Pork

Serves 6-8

3 lb pork roast
2 Tblsp 4-3-2-1 spice rub (recipe follows)
1/4 cup broth
2 cloves garlic, crushed
1 onion, coarsely diced

Make the spice rub:
Combine 4 tablespoons salt, 3 tablespoons brown sugar, 2 tablespoons paprika, and 1 tablespoon cayenne.

Put the onions and garlic in the crock of a large slow cooker. Rub the pork with the spice rub on all sides and add to the crock. Pour in the broth around the edge of the pork, but not on top. Set the slow cooker on low for 7-8 hours or on high for 4 hours.

When the meat is done, use two forks to pull it apart. It should shred easily. Discard bones and set the slow cooker to keep warm. Serve hot.
