Toasted Kale and Eggs with Pine Nuts


This simple delicious breakfast is nicely filling and Paleo to boot. The original recipe suggests griddled sliced tomatoes on the side, but in a pinch I have found that some fruit will do nicely. You can get raw pine nuts at a reasonable price at Trader Joes.



Toasted Kale and Eggs with Pine Nuts

1 1/2 cups kale
2 Tblsp olive oil
1 Tblsp pine nuts
2 eggs


In a small dry non-stick skillet toast the kale until slight charred, tossing occasionally. Remove to plate and set aside. Toast the pine nuts in the skillet, turning once. Remove to plate. Add the oil to the skillet and crack 2 eggs in it. Add the fried eggs to your plate. Serve hot. Enjoy!
