Baked Tilapia with Pineapple Salsa
Fresh pineapple in the house is cause for celebration! Could it be a little hint of spring? Here's a quick and tasty dinner that tastes light and fresh. Serve the fish over a bed of lettuce with a side of sweet potato fries for a kid-pleasing weeknight dinner. The salsa would be a great addition to pork as well.
Baked Tilapia with Pineapple Salsa

Serves 4
1 lb tilapia
1 cup chopped pineapple
1/2 avocado, diced
1/2 tsp green curry paste
2 scallions, chopped
handful of cilantro, finely chopped
2 tsp lime juice
salt and pepper
paprika (optional)
olive oil
arugula or spinach leaves (optional)
Heat broiler on low setting. In a small mixing bowl combine the pineapple, avocado, curry paste, scallions, cilantro, lime juice and pinch of salt and pepper. Set aside.
Season the fish with salt, pepper and paprika. Arrange on a sheet of parchment paper on a rimmed baking sheet. Drizzle with olive oil. Broil for about 8 minutes or until the fish is cooked through.
Serve on a bed of lettuce with salsa topping.
