Banana Cocoa Fritters


Healthy enough to be breakfast or a snack with a smear of nut butter, these fritters could also be dessert with the addition of some ganache or Nutella. You could even double them up to make ice cream sandwiches. Another great use for over-ripe bananas!

Banana Cocoa Fritters

Makes 10-12

3-4 ripe bananas
2 eggs
1/4 cup coconut flour
1/4 cup ground flax seed
1/4 cup cocoa (Dutch processed preferred)
dash of salt

In a mixing bowl, mash the bananas with a fork. Beat the eggs and add the rest of the ingredients. Mix well.

Preheat a nonstick frying pan or an electric pancake griddle and grease lightly with cooking spray. Using a portion scoop or a 1/4 cup measure form small patties about 2-3" round. Cook until done, turning once. Serve warm.
