Spicy Ginger Pork Lettuce Wraps


Looking for a quick weekday meal with Asian flavors? This is a good choice. A pound of ground pork, some lettuce leaves and some panty staples and...voilĂ ! Dinner is served. Try this with a cucumber salad or some boiled, salted edamame for a kid-pleasing menu.


Spicy Ginger Pork Lettuce Wraps

Serves 4-6

1 lb ground pork
1 red bell pepper, diced
2 garlic cloves, minced
1 Tblsp minced fresh ginger
1 Tblsp Thai chile sauce
1 Tblsp Asian fish sauce
1 tsp dark sesame oil
2 Tblsp grapeseed oil (or similar)
1 8-oz can diced water chestnuts
2 green onions, sliced thinly
2 Tblsp oyster sauce
2 Tblsp cilantro, chopped
24 Boston or Bibb lettuce leaves

In a medium bowl, combine pork with red bell pepper, garlic, ginger, chile sauce, fish sauce, sesame oil and 1 tablespoon grapeseed oil.

Heat a large heavy frying pan. Add remaining tablespoon of grapeseed oil. When it's hot, add the meat mixture and cook until brown, chopping it up with your cooking spoon. Stir in the water chestnuts, green onions, oyster sauce and cilantro. Remove from heat.

Serve hot with clean, dry lettuce leaves. Spoon cooked pork over lettuce for each serving.
