Quick Tomato Soup
How would you like a super easy, flavorful three ingredient soup recipe that takes 30 minutes from start to finish? Yeah, I thought so.
This recipe is handy when you arrive home late from work and there is nothing in the fridge. If you can manage to find half an onion, a can of tomatoes and butter you can be eating soup for dinner. Make an omelet or a grilled cheese sandwich and you'll have a proper meal.
Quick Tomato Soup

Serves 4
4 Tablespoons unsalted butter
1/2 onion, chopped
28 oz can of tomatoes, diced, whole or crushed
1 1/2 cup water or chicken broth
1 tsp salt
fresh herbs, optional
In a heavy pot over medium heat, melt the butter. Add the chopped onion, tomatoes, liquid (water or broth) and salt. Bring to a boil, then lower heat to a simmer. Let cook uncovered for about 30 minutes. Blend the soup with an immersion blender. Serve hot.
