Easy Oreo Ice Cream Cake
Blizzard Oreo ice cream cake--that's what my son wanted for his birthday party. But the one I ordered and sent my husband to pick up was not available because the Dairy Queen location had closed. Apparently they'd forgotten to tell Dairy Queen and Google because they were still listed as open on both. And their website still sent me confirmation of my cake order!
Never fear! This simple recipe saved the day. We had fun putting it together too. Watch the jazzy video tutorial; it makes it look as easy as pie. The next time I make this, my son asked that I leave off the whipped cream and just add the crushed oreos to the chocolate layer.
Easy Oreo Ice Cream Cake

Serves 6-8
12 ice cream sandwiches (Kemps vanilla or similar)
1.5 quart chocolate ice cream (Edy's), softened
12 Oreo cookies
4 oz cool whip (or substitute 1 cup heavy cream, whipped)
Line an 8 x 8" pan with foil. Unwrap six ice cream sandwiches and cut 1/3 off the length from two of them. Arrange these in a single layer in the pan. See this video demo to see how this is done. Spread 5-6 scoops of chocolate ice cream on top and spread in a smooth layer.
Unwrap six more ice cream sandwiches and trim two, as before. Arrange these on top of the chocolate layer. Spread another layer of chocolate ice cream on top. Put the pan in the freezer to solidify for at least four hours.
Put six Oreos in a bag and smash them with a rolling pin. They should be fairly pulverized. Stir these into the cool whip topping, or whipped cream. Frost the cake with the Oreo topping. Lightly smash or crumble the remaining six Oreos and press these into the topping as a garnish. Re-freeze for an hour or more. Remove and cut into squares and serve.
