Easy Soft Polenta


Making polenta over a hot stove used to be an Italian torture experience.  You had to tend to it constantly, stirring, stirring, stirring.  And the hot cornmeal would pop burning your skin during the long cook time.  Forget contact sports with coarse cornmeal--this is the 21st century!  Hello, microwave:)  With this simple recipe, you can have perfect polenta in 20 minutes.

Easy Soft Polenta
Adapted from 100 Best Quick Gluten-Free Recipes
Serves 4

1 cup polenta/corn grits (Bob's Red Mill)
3 1/2 cups chicken or vegetable broth
1 Tblsp butter
1/4 cup grated Parmesan cheese
1/2 tsp salt

In a large microwave-safe bowl (at least 8-cup capacity), whisk all the ingredients together.

Cover the bowl with a sheet of wax paper and microwave on high for 5-minutes, stir, and microwave for 5 more minutes.  Stir again. If a softer polenta is desired, add 1/2 cup more water.

Just before serving, microwave on high for 1 minute, stir and microwave for 1 minute more.
