Cocoa Crisps


I based this on Ella's recipe for Quinoa and Cacao Crispy Treats.  Not having popped quinoa available, I used another kind of gluten-free cereal called Gorilla Munch.  You can really use any kind of cereal and your choice of mix-ins--nuts, cereal, dried fruit, etc. In the rendition pictured above, I used walnuts, pumpkin seeds, dried cranberry, and date pieces.  Warning: addictive!

Cocoa Crisps
Makes 4 cups

5 Tblsp coconut oil
1/2 cup cocoa powder
6 Tblsp maple syrup
2 Tblsp almond butter
4 cups puffed cereal, nuts or chopped dried fruit (use gluten free cereal for a g-free version)

Place the coconut oil, cocoa powder, maple syrup and almond butter into a saucepan and gently heat for a few minutes until smooth and melted.

Meanwhile put your cereal, nuts and fruit into a mixing bowl.  Pour the melted mixture over the cereal and stir until well combined.

Scoop the mixture into mini-muffin liners and freeze for 10 minutes until well-formed.
