Grain-free Banana Pancakes


This is the simplest recipe and so good for weekend mornings.  You can make it with just two ingredients: bananas and eggs.  If you want to get fancy about it, you could add a few spices and some flax seeds as I did in this version of the recipe.

Grain-free Banana Pancakes
Adapted from Paleo Leap
Makes 10-12 small pancakes

2 ripe bananas
3 eggs
1 Tblsp ground flax seed
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp cardamom
1/4 tsp baking powder

Break the eggs in a bowl and whisk until lightly foamy.  Mash the bananas and add to the eggs.  Add the rest of the ingredients, mix well.  Use 1/8 cup batter for each pancake.  Serve warm and store any extra pancakes in the fridge.
