Dover Sole with Brown Butter Sauce
Brown butter sauce could make anything taste good. Here I've paired it with a mild fish for a quick weeknight dinner. You could use cod, sole, or any white fish. If you shop at Trader Joe's, try the economical frozen Dover Sole.
Dover Sole with Brown Butter Sauce
Serves 4-5
1 lb frozen Dover Sole (thaw in the fridge overnight, or in a sink of warm water)
Old Bay seasoning
1 Tblsp butter
1 Tblsp olive oil
For the sauce:
2 Tblsp butter
2 Tblsp lemon juice
2 Tblsp capers
2 Tblsp parsley, chopped
Pat the fillets dry with paper towels and season on both sides with Old Bay seasoning. Heat the butter and oil in a large non-stick skillet. When the butter is foaming, add the fish and cook until opaque, turning once.
In a small light-colored skillet, melt the butter. Continue to cook until the butter foams, the foam subsides and brown bits appear on the bottom of the pan. When fully browned, add the lemon juice and capers. Pour the sauce over the fish and garnish with parsley. Serve hot.
