Radicchio, Goat Cheese and Raisin Salad
Looking for a statement salad? Look no further. This is a quick prep salad that could be made for a weeknight dinner, but has the bold presentation and complex flavors a special occasion salad.
Radicchio, Goat Cheese and Raisin Salad
Adapted from Lidia's Italy in America cookbook
Serves 4
1/3 cup golden raisins
1 1/2 Tblsp balsamic vinegar
1 lb head of radicchio, cut into 1" shreds
1 1/2 Tblsp olive oil
1/2 tsp salt
5 oz fresh goat cheese (chevre)
Put the raisins in a small bowl and pour the vinegar over them. Let soak for 15 minutes.
Pour the raisins and vinegar over the radicchio in a salad bowl. Drizzle with olive oil, season with salt. Toss well. Crumble the goat cheese into chunks over the salad. Toss again gently to distribute the cheese.
