Tomato Sandwiches


At this time of year in Minnesota bumper crops of heirloom tomatoes are available at prices that can't be beat.  To celebrate the bounty, I like to make these tomato sandwiches.  They are very simple, so be sure to use the best ingredients you can find.

These sandwiches makes a nice light dinner, or a lunch served with some slices of melon or a green salad.


Tomato Sandwiches
Serves 4

1 loaf freshly baked bread (I get mine from The Wedge)
good mayonnaise, aioli or salted butter
2 meaty (not watery and seedy) heirloom tomatoes
1 lb fresh mozzarella
8 basil leaves, washed and dried
salt and pepper

Cut eight slices of bread and toast them lightly.  Spread each slice with mayonnaise, aioli or butter, to taste.

Cut the tomatoes and mozzarella into thick slices.  Place a slab of tomato on each slice of bread, sprinkle lightly with salt and pepper, then add a slice of mozzarella.  Top with a basil leaf.

Voila!  Serve immediately.
