Chocolate Sandwich Squares



This is a sandwich cookie that is sure to please.  It's super easy to make and they keep well in a sealed tin or in the freezer.  I made these once for my friend, Diana, and she asked me for the recipe today.  Here it is!


Chocolate Sandwich Squares
Adapted from Bars and Squares by Jill Snider
Makes 24 squares

Filling
1 3/4 cups semi-sweet chocolate chips
1 can (10 oz) sweetened condensed milk
2 Tblsp butter

Batter
2 cups packed brown sugar
2 eggs
1 cup butter, melted
1 tsp vanilla
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 cup chopped or slivered unblanched almonds

Filling: In a glass bowl, combine chocolate chips, sweetened condensed milk and butter.  Microwave on high for 30 seconds, stir, then 30 seconds more.  Stir until smooth.  Set aside.

Batter: In a bowl, whisk brown sugar, eggs, melted butter and vanilla until smooth.  Stir in both flours, mix until just blended.  Stir in almonds.  Mix well.

Line the bottom of a 13 x9" pan with parchment paper and grease the sides with butter or oil.  Spread half of the batter into the pan. Spread the filling evenly over the base.  Dot spoonfuls of the remaining batter over the filling and spread lightly with a knife to cover.

Bake in  preheated 350 degree oven until set, 30-35 minutes.  Let cool completely in pan.  Cut into squares.
