Westie's Ramen Plus

Westie was at home sick for a couple of days last week.  He asked me to get some ramen soup for him at the store.  I watched him doctor it up with egg and green onions.  It looked pretty good.  I tried some.  It was good!

This recipe makes a fast tasty lunch and is a handy addition to every eleven-year-old's cooking repertoire. You can also add any bits of chopped meat or vegetables you have on hand.  Frozen dumplings make a nice addition, if you have them.  Cook them according to package directions first, then add them with the green onions.

Westie's Ramen Plus
Serves 2

1 3-ounce package ramen noodles, chicken flavor
1 egg
green onions, sliced thinly

Prepare ramen noodles according to package directions.  Add green onions when you add the flavor packet.

Scramble the egg in a small bowl with a fork.  Add it to the hot soup in a thin stream while stirring constantly. The egg should cook instantly and form threads.  Serve.
