Black Bean and Corn Salad


The fresh flavors of this salad are the perfect side for a summer meal from the grill. Many recipes are overly complex, but this simple salad is a perfect blend of textures and flavors that you can put together in fifteen minutes.  Enjoy!


Black Bean and Corn Salad
Serves 4-5

1 15-oz can black beans, rinsed and drained
2 cups frozen corn thawed
1/2 cup red bell pepper, chopped
1/3 cup green onions, sliced (optional)
1/4 cup lime juice
1/2 cup cilantro, chopped
1/4 tsp ground white pepper
1/2 tsp salt
dash of garlic powder (optional)

Combine all ingredients in a bowl.  Cover and chill for an hour before serving to allow the flavors to mingle.
