Date Balls


These date balls are a healthy sweet treat, a little like energy bar bites.  Try different combinations of nuts--I used pistachios instead of the cashews recommended in the recipe in this batch.  You can also spice them up with cinnamon, cardamom or nutmeg.  Roll the balls in cocoa powder or cinnamon sugar to gild the lilly.  There is no end of combinations!  They would make a festive addition to the holiday table.

Makes 12-15

3/4 cup pitted dates
1/3 cup walnuts
1/3 cup cashews
1/4 cup unsweetened shredded coconut

Combine all the ingredients in a food processor and process until well-blended, about 30-60 seconds.  Pinch the mixture to be sure it will hold together.  If it is too dry, add 1-2 teaspoons water and briefly process again.

With your immaculately clean hands, roll generous teaspoonfuls of the mixture into small balls.  Repeat until all the date mixture has been rolled into balls.

Store the date balls in an airtight container in the refrigerator for up to a week.  (If there are any left.)
