No-bake Energy Bites


Good-bye Cliff Bars and hello Energy Bites!  These are seriously simple to make and go over well with kids and teens alike.  Modify the recipe as you wish to suit your taste, just don't leave out the honey or else they might not stick together well.  These are great in the summer when your kids are clamoring for cookies but you don't want to turn the oven on.



No-Bake Energy Bites

Makes about 20-24


1 cup old-fashioned rolled oats (use gluten-free oats for a g-free version)
1 cup coconut flakes (sweetened or unsweetened)
1/2 cup peanut butter (I use Skippy Natural)
1/2 cup ground flaxseed
1/2 cup chocolate chips (optional)
1/3 cup honey
1 tsp. vanilla

Stir all the ingredients together in a medium bowl until thoroughly mixed.  (I recommend spraying the measuring cup with Pam before filling it with peanut butter.)

Let chill in the refrigerator for half an hour.  Once chilled, roll into 1" balls and store in the refrigerator for up to one week.
